I ended up testing the different modes. I tested a half roll and realised it was auto leveling. I switched the 3 way selector to the middle position and then couldn't roll. All this time I'd been flying in Horizon mode, which I thought was Angle mode.
I then put it in Acro and had quite a good flight until gravity got the best of me and I crashed. There was a good 10+ meters between the drone and the landing place of the rolling RunCam 3 as the crash broke the cable ties holding the 3d printed RunCam mount. The only casualty apart from my ego at crashing in front of some friends was the 2 cable ties and a prop.
Not too bad overall and I learned something today. While I didn't fly 4 cell as I'd intended, I will now try that tomorrow
